Stephanie Camello Suggests Friday Fish Dishes for Lent (#2 on 2/26/21 - Pasta Camello with Tilapia and Salad)
It's the second Friday in Lent already and that means you get your second Friday Fish Dish recipe! This is a recipe Stephanie Camello is very fond of. It's her grandmother's recipe that she loves eating and she thinks you'll love it too.
This is an entire meal that starts with "Pasta Camello," then tilapia then finishes with a light salad.
Put olive oil covering the bottom of the skillet and add 4 cloves of chopped garlic and cook until it sizzles. Then add peeled and diced Roma tomatoes (about 12 for a pound of pasta). Now start smashing the tomatoes down using the back side of a spatula to desired consistency. Add capers, salt to taste, fresh basil leaves and pine nuts. Add as much or as little as you want! Stir it all in then put this sauce on the pasta once it's done cooking. Spaghetti tastes best with this sauce.
Fish time! This is pretty easy because you just need to buy a few pieces of tilapia and cook it on the skillet for 10 minutes. The topping is a blackened dry rub of your choice. Cook a few minutes, flip it and cook another few minutes, then it's done!
Lastly is the salad. This is easier than everything else because you can just buy some packaged salad or clean some fresh iceberg or endive. Stephanie Camello's grandmother would use some freshly washed endive and dressed it with olive oil, red wine vinegar, and a little salt and pepper. Toss it and it's good to go!
Add a nice fruit after the meal if you so choose and you'll end the day with happy taste buds on this second Friday of Lent.
