Stephanie Camello Suggests Friday Fish Dishes for Lent (#3 on 3/5/21 - Elbows & Barrramundi)

It's already the third Friday of Lent, so it's time for your third Friday Fish Dish! This one is fairly similar to last week's but with an even tastier fish!

It's quite simple! Cook elbow macaroni pasta and top it with a tomato chunk white wine sauce topped with fresh basil leaves. You can choose any topping you like really. You can even opt for a butter and Parmesan cheese saucy topping that is rich and delicious!

Then, buy a fresh piece of Barramundi fish. Apply a breadcrumb rub on the fish. You can do whatever style you like, such as dipping the fish in a scrambled raw egg first and then in the breadcrumb rub to get the rub to stick, or simply use your hands to rub the breadcrumb mix onto the fish. Or you could just put salt and pepper on the bare fish and bake it. So many options here, so pick the one that your family likes best! Then just bake the fish in the oven until the topping is golden brown.

Finish it off with a nice vegetable of green beans or a mix of peas and carrots. Or stick with a fresh salad if you wish! Pair it all with a favorite white wine and you're good to go!

And that's pretty much it - a buttery, flaky Barramundi fish dish with pasta and veggies on the side. A perfect mid-Lent meal the whole family is going to love!

Stephanie Camello Compiles the Origins of U.S. State Names

Alabama - Native American Choctaw name meaning “vegetation gatherer.” Alaska - Aleut language translates “Alaska” to “the object toward which the action of the sea is directed.” Arizona - Spanish word “Arizonac” which has origins from the Native American O’odham tribe’s word meaning “small spring.” Arkansas - The French pronunciation of the Quapawa Indians word for which the Algonquin tribe referred to as “akansa.” The French pronunciation was “Arcansas.” The reason we don’t say the “S” is because on an 1881 act passed by the state to solve a dispute between two senators who disputed over the pronunciation. We now pronounce it the French way with the silent “S.” California - The name of an island in a Spanish 16th Century novel for which the Spanish explorers named the land they thought was an island. Turns out it was what we think of today as the state of California! Colorado - Named after the C...
