Stephanie Camello Suggests Friday Fish Dishes for Lent (#5 on 3/19/21 - Tilapia with Salsa and Roasted Veggies)
On this 5th Friday of Lent and feast day of St. Joseph let's take a look at another fish dish that's very tasty!
Presenting tilapia dressed with salsa and avocado with roasted veggies on the side!
Cook tilapia fillets and top it with your favorite salsa or pico de gallo. Slice up some avocado and place it on top of the salsa! Fish is done!
Next, dice up some of your favorite veggies. Here we have red bell pepper, eggplant and onion. You can include whatever you like, but note that for roasting purposes, eggplant, bell peppers, onions and other fleshy vegetables work best! Roast them in the oven with a little salt and pepper and you're good to go!!
